1/2 c. unsalted butter
1 c. sugar
2 eggs
3 ripe bananas
1 1/2 c. flour
1/2 tsp. baking soda
Combine butter and sugar until fluffy. Add eggs one at a time beat well. Beat in bananas and add dry ingredients. Stir just enough to mix. Bake in muffin tins sprayed with Pam. May sprinkle tops with chopped walnuts. Bake at 350 degrees for 25 minutes. Makes 15 to 18 muffins.
